DIY Cake Flour

Ingredients: for 1 cup cake flour

  • 105g (14 tbsp) all-purpose flour

  • 16g (2 tbsp) cornstarch

Directions:

  1. Weigh out your flour and cornstarch into a container of your choice. I like using deli containers because I will simply shake aggressively to mix thoroughly.

  2. Mix using your tactic of choice. :)

  3. Before mixing into your cake batter, sift thoroughly to give one last mix.

FAQ:

Q: What is the purpose of using cake flour?

Cake flour is good for creating a more delicate crumb structure due to fewer proteins —> less gluten formation —> more delicate taste.

PERSONALLY SPEAKING, I only use cake flour for actual birthday cakes or delicate baking. For most casual baking, I will simply sub AP flour.
