Chicken Caesar Wrap

Ingredients: Four 9’’ tortilla rolls
4 breaded chicken tenderloins. I used some from Trader Joe’s.
1/4 cup croutons. I made some from leftover hamburger buns
2 cups iceberg lettuce, chopped or torn
6 cherry tomatoes, sliced
parmesan or asiago cheese, shaved, to taste
Caesar dressing of choice. I used Trader Joe’s refrigerated vegan one.
4 large tortillas. I used 9’’ ones from HEB, but you can totally go larger.
Directions:
Using your convection oven or air fryer, heat up your breaded chicken.
Wash and process lettuce and tomatoes. Add them to a large mixing bowl.
Add your preferred amount of cheese.
Chop your chicken into bite-sized pieces. Mix in your chicken and croutons liberally.
Add Caesar dressing to taste and mix.
Heat up the tortillas on both sides for 1 minute on medium heat. I like to heat mine up on my metal griddle with no oil.
Wrap filling into the tortillas and enjoy!

Q: How did you make the croutons?
I used some leftover hamburger buns to make them as part of my One Ingredient, Zero Waste series. :) This same technique applies to any stale bread you have, with the main difference being the time in the oven. Enriched breads will do better on a lower temperature over a longer time.
Q: How can you make these for on-the-go enjoyment?
You can save them for later (and facilitate the wrapping process) by using parchment paper or foil! Use the foil/parchment and tortilla as one unit to make folding easier.
