Ingredients:
1/2 box of Rice Chex cereal
1/2 container (8 oz) peanut butter. I used Cocomo, which is coconut peanut butter, so it melts more like peanut butter + coconut oil. I did not add coconut oil
3 tbsp coconut oil
Option 1: 1/2 cup powdered sugar and 1/2 cup protein powder of choice OR
Option 3: 1 cup protein powder. I used Optimum Nutrition Chocolate for the most classic flavor.
Directions:
In a small saucepan, heat up the peanut butter and coconut oil on low until fully melted and very liquid. Allow it to cool for a bit.
Put cereal into a gallon zip-lock bag.
CAREFULLY put them into a zip-lock bag with your Chex cereal and shake to coat all cereal. This might be a little hot, so be careful.
Add in your protein powder/powdered sugar mixture into the bag and shake it to coat evenly. If it’s not coating evenly, add more powdered sugar/protein powder.
Pour into a bowl to serve. Enjoy!
FAQ:
Q: Why did my peanut butter clump up in the zip lock bag?
It’s possible that either your peanut butter was not liquidy enough (it needs to be REALLY runny), or it cooled down too much. If it’s not runny enough, consider making the next batch with more coconut oil. If it cooled down too much, consider working quicker between when you heat the peanut butter and when you initially coat the cereal.
