Vegetarian Pineapple Fried Rice

Ingredients: 1 big portion, 2 small portions

  • 2 eggs, beaten and lightly salted

  • 1 tbsp bacon fat or lard or high-heat oil

  • 5 green onions or 1/2 yellow or white onion, diced

  • 1/2 bell pepper of choice, diced

  • 1/2 cup (175g) pineapple, diced or large slices depending on preferences

  • 1 1/2 cup fried rice rice. You can also use takeout rice, day-old rice, or any kind of rice that is not freshly made. I made a video here explaining how to make fried rice rice with fresh rice.

  • 2 tbsp (50g) crushed cashews, roasted

  • 1 tbsp (30g) garlic chili sauce, or more depending on spice tolerance. My preferred one is Huy Fong.

  • 1 tbsp dark soy sauce

  • 1 tbsp xiaoshing cooking wine

  • couple of dashes of sesame oil to taste

  • juice of 1/2 lime or to taste

  • cilantro for garnish

  • optional: pineapple bowl for serving

Directions:

  1. On low heat, lightly scramble your beaten egg until 75% cooked. Remove from heat and set aside.

  2. Melt your lard/bacon fat/high heat oil, and add green onion whites and optional onions. If your green onions are nice and thick, you won’t need the onion. Cook for 2-3 mintes.

  3. Add bell pepper and cook for 2 minutes.

  4. Add pineapple and allow to caramelize and deglaze the pan for 2-3 minutes. Stir frequently to avoid sticking.

  5. Add chili garlic paste to pan and stir to combine. Lower heat to medium low to toast the sauce for 1-2 minutes.

  6. Add cashew nuts and toast for 1-2 minutes. I sometimes add pine nuts instead since that’s what I have on hand more. It’s good!

  7. Add your rice and carefully break apart the large pieces. Make sure to combine aggressively and try to coat all grains with the fat.

  8. Add in egg and green onion greens. Don’t stir yet.

  9. Change the heat from medium low to medium high and add dark soy sauce, cooking wine, sesame oil, and lime juice. Stir aggressively to combine and break up some of the pieces of egg.

  10. Garnish with optional cilantro and additional cashews, lime juice, and green onion greens as you’d like. Serve hot and perhaps with some Chicken and Corn Meatballs? ;)

FAQ:

Q: Why is my rice texture so mushy?

It’s possible that your rice is too mushy because your original rice had too much moisture. Check out this video I made on how to make fried rice rice. Also, try using a longer-grain rice, such as Jasmine, to increase your chances for success.

Q: What is a good wine pairing for this meal?

I really enjoyed an Inama Vin Soave with it. Mine was an Soave Classico from Whole Foods.
