Banana Bread Muffins (No Mess!)

This recipe is based off of All Recipes, but with minor adjustments and in metric for ease with my kitchen scale. :)
Yield: 6 muffins · Prep: 10 minutes · Bake: 18–22 minutes
Ingredients: 6 muffins
120g/1 cup AP flour
½ tsp baking soda
big pinch of salt
100g/~½ cup brown sugar
¼ cup ghee or butter, softened
I used this ghee, which I always keep around because I consistently forget to keep butter around.
1 egg
150g to 225g (⅔ to 1 cup) overripe bananas, mashed
Directions:
Preheat your oven or air fryer to 350F.
Before you start, make sure your butter is softened. If your butter is not softened, here’s a way to soften butter in less than 1 minute!
Mix your AP flour, baking soda, and salt in a separate container. Set aside.
Cream together your brown sugar and butter until whipped.
Add in egg and bananas and mix to combine.
Slowly add in your flour mixture and stir on low speed until 90% mixed. Avoid over-mixing as the muffins can become too tough.
Separate batter into 6 muffin liners, filling about 75% of the way full (~3 tbsp per muffin).
Bake for 18 minutes (convection) or 20-22 minutes (non-convection).

Q: Can I use regular butter instead of ghee?
A: Yes, you can use softened unsalted butter in the same amount (1:1) as the ghee listed in the recipe. :)
Q: How ripe should my bananas be?
A: Use overripe bananas with lots of brown spots or are fully brown. They’ll be sweeter and mash more easily.
Q: Can I bake this as a loaf instead of muffins?
A: Yes! I am anti-loaf and pro-muffin but I know I am in the minority. You’ll need a small loaf pan (9’’ x 5’’) and bake for 35–45 minutes with a toothpick in the center. I would use a non-convection baking method if possible to avoid the top from crisping up too much.
Q: Do these muffins freeze well?
A: Yes. 3 - 4 days in the fridge then freeze them. Thaw at room temperature or microwave briefly before eating.
